Well after a long year of fighting back from a back break and a blood clot I found out on Dec. 30 that I have Celiac Disease. Apparently my body can not process Glutens found in wheat, barley and rye. I am now 48 years old (young) and have to start all over with my eating habits. Although this is not entirely a bad thing since I should be eating better anyways. You don't really how bad your eating habits are until you crave an ole greasy Hamburger. I can still have a hamburger but minus the bun. The disease is controllable through diet and can be reversed but as of yet can not be cured. The disease is also genetic which maens that my children can also have it. Unfortunitely so far my youngest son has been tested possitive. There are three of us living under the same roof so my wife (God Love Her) has chosen to make our entire house Gluten free. Let me explain a little bit about the Disease.
My body cannot process Glutens so it sees them as antibodies so it starts to attack them, unfortunitely the small intestine is where the Glutens are attacked. This is where the body pulls nutrients for the body to survive but can't because the hairs in the intestine have begun to be mowed down by antibodies. With out these hairs the body is deprived of nutrients and begins to become mal-nourished.I can stop this process by staying on a gluten free diet and reverse it but never cure it.
To all of the Celiacs out there I wish you all the best, Depressing as this may sometimes be we all need to eat healthier, but Celiacs were not given the choice.
